Every state, county and city has slightly different rules. Here's the universal checklist of documents we collect on WheelEstate so your vehicle is legal everywhere it operates.
Business License
Why: Proves your operating entity (LLC/sole prop) is legally registered to do business in your state.
Where to get it: Secretary of State website. Some states call it a 'Certificate of Authority'.
Food Service / Mobile Vendor Permit
Why: City and county-level permit specifically for selling food from a vehicle. Without it, you'll be ticketed and shut down.
Where to get it: Local health department or city clerk's office. Often requires food handler training too.
Vehicle Registration
Why: Standard vehicle title & commercial plates. Some cities require additional 'commercial vehicle' tags.
Where to get it: DMV. Bring purchase docs + proof of insurance.
Insurance Certificate (COI)
Why: General liability ($1M typical) + commercial auto. Many event venues require you to add them as 'additional insured'.
Where to get it: Specialty food truck insurers (FLIP, FoodLiability, Progressive Commercial).
Health Inspection
Why: Confirms your kitchen meets temperature, sanitation and ventilation standards. Score is often required to be visibly posted.
Where to get it: County health department. Schedule before opening; spot-checks happen anytime.
Fire Suppression Inspection
Why: Verifies your hood suppression system, propane tanks, and extinguishers are up to code (NFPA 96 + NFPA 58).
Where to get it: Certified fire-protection contractor; document filed with local fire marshal.
